Gas grill - You can set up your gas grill for indirect burning by turning the one or two burners to the lowest setting. Likewise, one to two burners should be at their highest heat setting for direct fire.


Charcoal grill - Light your charcoal and pour the majority of the pile on one side of the grill for your direct heating. Pour the smaller charcoal on another side of the grill for the gentler, indirect heating.


Grilling your sausage

Cook over indirect heat - Arrange the sausage on the grill grate over the indirect part of the grill. Let it cook for about 10 minutes with the lid closed. This enables it to absorb all the flavors and ensure the inside is well cooked. Halfway, flip the sausages to the other side.


Cook over direct heat - Your sausages won’t be brown enough at this point. Thus transfer them to the direct heat side of the grill. Cook each side for about 2 - 3 minutes until they’re brown to your taste.


What temp to grill sausage?

The best temperature to grill sausage is 425 degrees Fahrenheit. If the temperature is too high, the outside will overcook and turn brownish while the inside remains uncooked.


Should I precook my sausages before grilling?

You don’t have to precook your sausages as the indirect and direct method above ensures your sausages are well-cooked.


If you prefer to precook, you can do so in a liquid such as water or beer over a slow simmer until it reaches a temperature of 150 degrees Fahrenheit.



What should the internal temperature of Italian sausage be?

The internal temperature of a cooked Italian sausage should be at 160 degrees F. At a higher temperature, the fat in the sausage will melt and drip out. There goes your sweet sausage.
